Carnation Pumpkin Pie
3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 oz.) LIBBY’S® 100% Pure Pumpkin
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
1 unbaked 9-inch (4-cup volume) deep-dish pie shell
Whipped cream (optional)
Directions:
MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.
POUR into pie shell.
BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.

2 eggs, lightly beaten
1 cup evaporated milk, undiluted
2 tablespoons water
1/2 teaspoon vanilla extract
1 unbaked pastry shell (9-inch)
PREPARATION:
Combine pumpkin, sugar, salt, spices, and flour in a medium mixing bowl. Add eggs; mix well. Add evaporated milk, water, and vanilla; mix well. Pour into pastry-lined pie pan. Bake at 400° for 15 minutes; reduce heat to 350° and bake about 35 minutes longer, or until center is set.

mince meat pie is popular, cheesecake is also a winner, especially with a rasberry topping.

I’m making cupcakes that look like turkeys. They’re fun for the kids, and are bound to make the adults smile too!
Take cupcakes frosted with chocolate frosting and place candy corn on half of it to resemble feathers (slant them at an angle), cut a Nutter Butter cookie in half and use as wings. Slice a large marshmallow in quarters and spread with chocolate frosting for a head. Add white frosting dots for eyes, and a strip of red Fruit by the foot for the waddle!

watergate salad, you know the pastacio pudding, the pineapple , the coolwhip it’s quite yummy, or carrot cake with creamcheese frosting or make an apple/raisin/walnut pie or just get one at publix.

Any desert would be good — but something that is still in the “spirit of Thanksgiving” but not pumpkin pie might be Cheesecake – but top it with a homemade cranberry sauce.
Also, my mom makes something she calls “strawberry delight” — very light and delicious and low cal too — She mixes Strawberry Jello (can you say sugar free?) according to package directions. Then adds whipped cream (lite whipped topping works too) and fresh or frozen strawberries. Then she takes an angel food cake and tears it into pieces and tosses it in. Dump it all in a cake pan and place in the fridge until set. YUMMY!
